Add this wet mixture to the squash and apricot mixture, stirring until just combined. Gently fold the wet ingredients into the dry ingredients until just moistened. Be careful not to overmix; a few lumps are perfectly fine. (5 minutes)

Spoon the batter into the prepared muffin cups, filling each cup about 3/4 full. (5 minutes)
