Follow The Directions

Stuff the cavity of the chicken with carrots and onion. (5 minutes)

Rub the chicken skin generously with butter and place it in the slow cooker. (5 minutes)

Halve the lemon and squeeze the juice evenly over the chicken. Slice the juiced lemon halves into wheels and arrange them around the chicken. (5 minutes)

Sprinkle parsley, salt, poultry seasoning, thyme, and paprika over the top of the chicken. (2 minutes)

Cover and cook on Low for 8 to 10 hours or High for 4 to 5 hours. (8-10 hours)

Check for doneness: An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should register 165 degrees F (74 degrees C). (2 minutes)

For an extra crispy skin, broil the chicken for a few minutes after slow cooking. Watch carefully to prevent burning.
If you don't have fresh lemon, 2 tablespoons of lemon juice can be substituted.
Add other vegetables like potatoes or celery to the slow cooker for a complete one-pot meal.
