Follow The Directions

01

Step
7 mins

In a large, heavy-bottomed pot or Dutch oven, brown the ground beef with the minced garlic over medium-high heat, breaking it up with a spoon until it is fully browned and crumbly. Drain off any excess grease. (5-7 minutes)

02

Step
1 mins

Pour in the beef broth (or water) and add the diced potatoes, chopped onion, and celery. Stir to combine. (2 minutes)

03

Step
3 mins

Add the dried parsley, crushed rosemary, ground thyme, and dried oregano. Season generously with salt and freshly ground black pepper. (1 minute)

04

Step
2 mins

Bring the soup to a gentle simmer, then reduce the heat to low, cover, and cook until the potatoes are tender and easily pierced with a fork. (Approximately 30 minutes)

05

Step
30 mins

Taste and adjust seasonings as needed. Serve hot.

For a richer flavor, consider using beef broth instead of water. You can also add a bay leaf during the simmering process for added depth; remember to remove it before serving.
Yukon Gold potatoes offer a creamier texture compared to Russet potatoes, but either will work well. Feel free to experiment with other root vegetables like carrots or parsnips.
If you prefer a thicker soup, you can mash a portion of the cooked potatoes against the side of the pot to release starch and thicken the broth.
