Follow The Directions

Bring a large pot of lightly salted water to a rolling boil. Add the rotelle pasta and cook according to package directions, about 10-12 minutes, until al dente. Drain the pasta thoroughly and rinse with cold water to stop the cooking process. (Approximately 15 minutes)

In a large serving bowl, combine the cooked rotelle, broccoli florets, chopped carrots, chopped tomatoes, grated Parmesan cheese, drained black olives, and sliced pepperoni. (Approximately 5 minutes)

Pour half of the Italian dressing over the salad and toss gently to coat all the ingredients evenly. (Approximately 2 minutes)

Cover the bowl tightly with plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to meld together. (Approximately 8 hours)

Just before serving, pour the remaining Italian dressing over the salad and stir gently to incorporate. This will refresh the flavors and add a final touch of zest. (Approximately 2 minutes)

For a vegetarian option, omit the pepperoni and add marinated artichoke hearts or sun-dried tomatoes.
Feel free to substitute your favorite vegetables, such as bell peppers, cucumbers, or red onion.
For a creamier dressing, whisk in a tablespoon of mayonnaise or Greek yogurt.
This salad can be served chilled or at room temperature.
Make sure to not overcook the pasta.
