Prepare a double boiler by filling a saucepan with about an inch of water and bringing it to a gentle simmer. Place a heatproof bowl on top, ensuring the bottom doesn't touch the water. (5 minutes)

Combine 1/2 cup of the semisweet chocolate chips and 1/2 cup of the milk chocolate chips in the double boiler. Stir frequently with a rubber spatula, making sure to scrape the sides of the bowl to prevent burning, until the chocolate is melted and smooth. (3-5 minutes)

Remove the bowl from the heat and stir in the remaining semisweet and milk chocolate chips until completely melted and the mixture is glossy. This tempering process will help the chocolate set properly. (2-3 minutes)

Line a baking sheet with parchment paper. This will prevent the strawberries from sticking.

Holding each strawberry by its stem, dip it into the melted chocolate, swirling to ensure it's evenly coated. Gently tap off any excess chocolate.

Place the chocolate-covered strawberries on the prepared baking sheet.

Chill in the refrigerator until the chocolate is firm and set, approximately 2 hours. This will give the chocolate a beautiful snap.

For a smoother chocolate finish, add a teaspoon of coconut oil or vegetable shortening to the chocolate while melting.
If you don't have a double boiler, you can melt the chocolate in the microwave in 30-second intervals, stirring in between to prevent burning.
Get creative with toppings! Sprinkle chopped nuts, shredded coconut, sprinkles, or a drizzle of white chocolate over the strawberries before the chocolate sets.
