For a richer flavor, sauté a diced onion and some minced garlic with the ground beef. Consider adding a layer of shredded cheddar cheese between the ground beef and the mashed potatoes for extra cheesy goodness. If your pumpkin is wobbly, place a few crumpled pieces of aluminum foil around it in the baking dish to stabilize it. To enhance the pumpkin flavor, sprinkle the inside of the pumpkin with a little brown sugar or maple syrup before filling. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
