Step

In a large resealable plastic bag, combine the flour, salt, and pepper. Add the beef cubes, seal the bag, and shake well to ensure the beef is evenly coated. (5 minutes)

Heat the olive oil in a large skillet over medium-low heat. Add the sugar and cook, stirring constantly, until it melts and turns a golden caramel color. (5 minutes)

Add the coated beef to the skillet and sear on all sides until nicely browned. (5-7 minutes) Transfer the browned beef to a 6-quart or larger slow cooker.

Pour the water, tomato sauce, and red wine over the beef in the slow cooker. Add the carrots, potatoes, olives, sofrito, sazón seasoning, adobo seasoning, soy sauce, and Worcestershire sauce. Stir well to combine all ingredients. (5 minutes)

Cover the slow cooker and cook on Low for 8-10 hours or on High for 4-6 hours, or until the beef is very tender and easily shredded with a fork and the vegetables are tender. (8-10 hours or 4-6 hours)

For a richer flavor, brown the beef in batches to avoid overcrowding the skillet.
Adjust the amount of adobo and sazón seasoning to your preference. Start with the recommended amount and add more to taste.
If you don't have red cooking wine, you can substitute with beef broth or water.
Serve hot with white rice or mofongo (mashed plantains) for a truly authentic Puerto Rican meal.
