Stir sour cream, mayonnaise, and 1/2 cup of chives together in a large bowl; stir in cooled potatoes. Season with salt and pepper; garnish with remaining chives.

For an extra layer of flavor, try adding a tablespoon of Dijon mustard to the dressing.
Red potatoes or Yukon gold potatoes also work well in this recipe.
The potato salad can be made a day ahead of time. Store it in an airtight container in the refrigerator.
