Follow The Directions

01

Step

In a medium saucepan, bring the water to a rolling boil. Stir in the rice, reduce the heat to low, cover, and simmer until all the water is absorbed and the rice is tender. (Approximately 30 minutes)

02

Step

While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced chourico and cook, stirring occasionally, until lightly browned and fragrant. (2 minutes)

03

Step

Add the chopped onion and minced garlic to the skillet with the chourico. Cook, stirring frequently, until the vegetables are softened and translucent. (5-7 minutes)

04

Step

Pour in the tomato sauce, red pepper flakes, Italian seasoning, salt, and pepper. Stir well to combine. Reduce the heat to low and simmer, allowing the flavors to meld together. (10-15 minutes)

05

Step

Gently stir in the rinsed and drained fava beans. Cook until the beans are heated through, being careful not to overcook them. (2-3 minutes)

06

Step

Serve the chourico and bean mixture hot, spooned generously over the bed of fluffy rice.

For an extra layer of flavor, consider adding a splash of dry white wine to the skillet along with the tomato sauce.
If you prefer a milder dish, reduce or omit the red pepper flakes.
Fresh parsley, chopped and sprinkled over the finished dish, adds a vibrant touch.
Adjust the amount of salt to your taste after the dish is finished.
