Preheat oven to 400 degrees F (200 degrees C). (5 minutes)

Heat the olive oil in a large Dutch oven or oven-safe pot over high heat. Brown the pork cubes on all sides until deeply golden. Work in batches to avoid overcrowding the pot. (15 minutes)

Pour in the white wine, scraping up any browned bits from the bottom of the pot. Stir in the bread crumbs to coat the pork evenly. (3 minutes)

In a separate bowl, combine the chopped onions, minced shallots, minced garlic, and parsley. Sprinkle this mixture over the pork in the Dutch oven. (2 minutes)

Transfer the Dutch oven to the preheated oven and cook for 10 minutes. (10 minutes)

Reduce the oven temperature to 350 degrees F (175 degrees C). Pour in the beef stock. Cover the Dutch oven and continue cooking for 50 minutes, or until the pork is very tender. (50 minutes)

Remove the cover, increase the oven temperature back to 400 degrees F (200 degrees C), and cook for an additional 10 minutes to allow the sauce to thicken slightly. (10 minutes)

Remove from oven and stir in the red wine vinegar. Taste and adjust seasoning as needed, adding more vinegar for brightness or salt and pepper to taste. (2 minutes)

For a richer flavor, consider using bone-in pork shoulder and increasing the cooking time.
If the sauce becomes too thick, add a little more beef stock to reach your desired consistency.
Serve over buttered egg noodles, mashed potatoes, or polenta for a complete and satisfying meal.
