Preheat oven to 350°F (175°C). Grease an 8-inch broiler-safe baking dish with cooking spray. (Prep time: 5 minutes)

In a large saucepan over medium heat, melt butter. Add garlic and crushed red pepper; cook, stirring, until fragrant and lightly browned, about 1 minute. (Cook time: 1 minute)

Stir in stock, salt, pepper, and 1 1/2 cups marinara sauce. Bring to a boil, then reduce heat to low, cover, and simmer, stirring occasionally, until rice is almost cooked, 18-20 minutes. (Cook time: 20 minutes)

Remove from heat and stir in Parmesan and remaining 1/2 cup marinara until combined.

Transfer rice to the prepared baking dish, spreading evenly.

Top with pepperoni and mozzarella.

Bake until cheese is melted, about 10 minutes. Increase oven temperature to broil; broil until cheese is golden brown, 2-5 more minutes. (Cook time: 15 minutes)

For a richer flavor, use chicken stock instead of vegetable stock.
Feel free to customize with your favorite pizza toppings, such as mushrooms, olives, or bell peppers.
If you don't have a broiler-safe dish, simply skip the broiling step and bake until the cheese is melted and bubbly.
