For a richer flavor, use dark molasses. Be careful not to overbake the cookies, as they will become too hard. If the dough is too sticky to roll out, add a little more flour, one tablespoon at a time. Store the baked cookies in an airtight container at room temperature for up to a week. Experiment with different spices to customize the flavor. Cardamom and star anise are popular additions.
