Render the Bacon: In a 2-quart Dutch oven or heavy-bottomed pot, place the chopped bacon. Cook over medium-high heat, stirring occasionally, until the bacon is crisp and has rendered its fat, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside on paper towels, reserving about 2 tablespoons of bacon fat in the pot. If there is too much bacon fat, remove the excess.

Sauté Aromatics: Add the chopped yellow onion to the pot with the rendered bacon fat. Sauté over medium heat until translucent and softened, about 5 minutes. Add the minced jalapeno and continue to sauté until fragrant, about 2 minutes.

Combine and Simmer: Return the cooked bacon to the pot. Add the rinsed and drained pinto beans, diced tomatoes (with their juices), chicken stock, water, half of the sliced green onions, cilantro, salt, garlic powder, and chipotle pepper. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for at least 15 minutes, or up to 45 minutes, stirring occasionally, until the flavors have melded and the beans have thickened slightly.

Adjust and Serve: Taste and adjust seasonings as needed. Stir in additional cilantro and/or chipotle pepper for more flavor. Garnish with the remaining green onions and a sprinkle of fresh cilantro before serving.

For a vegetarian version, use vegetable stock and omit the bacon. Consider adding a teaspoon of smoked paprika to enhance the smoky flavor.
To deepen the flavor, consider adding a ham hock or smoked turkey leg to the pot while simmering. Remove before serving.
These beans can be made ahead of time and reheated. The flavors will develop even further overnight.
If you like a thicker consistency, mash some of the beans against the side of the pot while simmering.
