Follow The Directions

In a small bowl, whisk together the balsamic vinegar, 2 tablespoons of olive oil, honey, Dijon mustard, minced garlic, and red pepper flakes. Set the balsamic vinaigrette aside. (Prep time: 5 minutes)

Cut the peeled sweet potato into 1/4-inch thick fries. (Prep time: 5 minutes)

Heat the remaining olive oil in a large skillet over medium heat. Add the sweet potato fries and cook, turning occasionally, until tender and lightly browned, about 20 minutes. Remove from the pan and set aside. (Cook time: 20 minutes)

Add the chicken tenders to the pan and season with kosher salt and freshly ground black pepper. Sear the chicken until golden brown on all sides, approximately 3 minutes per side. Remove from the pan and set aside. (Cook time: 6 minutes)

Add the chopped asparagus, broccoli florets, and halved cherry tomatoes to the skillet. Season with salt and pepper. Cook until the asparagus and broccoli are bright green and slightly tender, and the tomatoes have softened, about 5 minutes. (Cook time: 5 minutes)

Move the vegetables to one side of the pan and return the chicken and sweet potatoes to the skillet. Pour the prepared balsamic vinaigrette over the chicken and vegetables. Gently toss the vegetables and chicken until the chicken is cooked through, and the vinaigrette has slightly thickened, about 5 more minutes. (Cook time: 5 minutes)

For a richer flavor, marinate the chicken in half of the balsamic vinaigrette for at least 30 minutes before cooking.
Feel free to substitute other vegetables based on your preference or what you have on hand. Bell peppers, zucchini, or green beans would all work well.
Adjust the amount of red pepper flakes to control the level of spice.
