For best results, use ripe but firm peaches. Overripe peaches will become too mushy during baking. If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to a measuring cup, then filling the rest of the cup with milk. Let it sit for 5 minutes before using. Feel free to add other fruits to the cobbler, such as blueberries, raspberries, or blackberries. The cobbler can be stored in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven until warmed through.
