Baker's ammonia (ammonium bicarbonate) is a traditional leavening agent that gives these cookies their unique texture and flavor. It can be found at specialty baking stores or online. If you can't find it, you can substitute 1 1/2 teaspoons of baking powder, but the flavor and texture will be slightly different.
Make sure your butter is softened to room temperature for easy creaming.
Freezing the dough balls is essential to prevent the cookies from spreading too much during baking. Do not skip this step.
