For a richer flavor, use high-quality extra virgin olive oil.

This peperonata is excellent served warm or at room temperature. It can also be made a day ahead of time, as the flavors meld together beautifully overnight.
If you don't have fresh oregano, you can substitute 1 teaspoon of dried oregano.
