Step

Bring a large pot of lightly salted water to a rolling boil. Add the tortellini and cook, uncovered, stirring occasionally, until they float to the top and are tender but firm, about 2-3 minutes. Drain, reserving 1/2 cup of the pasta water.

Meanwhile, melt the butter in a large skillet over medium heat. Add the mushrooms and sauté until tender and golden brown, about 5 minutes. Reduce heat to low, pour in 1 1/2 cups of the heavy cream, and simmer, stirring occasionally, for 4-5 minutes.

Remove the skillet from the heat and add the drained tortellini. Toss to combine. Stir in the remaining 1/2 cup of heavy cream, 1 1/2 cups Parmesan cheese, lemon zest, nutmeg, salt, and pepper. Toss until well combined.

Place the skillet over low heat and cook until the Parmesan has melted and the sauce has thickened slightly, about 1-2 minutes. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.

Serve immediately, garnished with the remaining Parmesan cheese and fresh parsley.

For an even richer flavor, try using brown butter in place of regular butter.
Adding a clove of minced garlic to the mushrooms while sautéing will deepen the flavor profile.
Freshly grated nutmeg is highly recommended for the best aroma and flavor.
Don't overcook the tortellini! They should be al dente, with a slight bite.
