Heat olive oil in a Dutch oven over medium heat. Add the chopped onions and minced garlic and cook, stirring occasionally, until the onions are translucent (approximately 3-5 minutes).

Stir in the cut cabbage, white vinegar, caraway seeds, and white sugar. Bring the mixture to a simmer, then reduce the heat and cook until the cabbage begins to soften (about 15 minutes).

Add the kielbasa sausage, stewed tomatoes, and salsa to the cabbage mixture. Season with salt and pepper to taste. Cover the Dutch oven and simmer gently until the cabbage is completely tender and the flavors have melded together (approximately 45-60 minutes).

For a vegetarian option, omit the kielbasa and add a can of drained and rinsed cannellini beans for extra protein.
A dollop of sour cream or Greek yogurt adds a lovely tang and richness when serving.
Feel free to adjust the amount of garlic, caraway seeds, or salsa to suit your personal preference.
Smoked turkey or other smoked sausage can be substituted for the kielbasa.
