To prevent the cake from sticking, grease the tube pan thoroughly and dust it with flour, tapping out any excess. If the top of the cake starts to brown too quickly during baking, tent it loosely with foil. A glaze made with powdered sugar and a splash of milk or lemon juice makes a lovely addition.
