Step

In a large stockpot, add enough olive oil to thinly coat the bottom. Heat over medium heat. Add 1 chopped onion, carrots, minced garlic, bay leaf, red pepper flakes, Greek seasoning, rosemary, thyme, basil, and Italian seasoning. Season with salt and pepper. Cook and stir until the mixture begins to soften and brown, about 15 minutes.

Add the diced tomatoes with juice and ground beef, breaking the beef apart with a wooden spoon. Bring to a boil. Cook until the beef is cooked through and the carrots are tender, about 10 minutes.

Add the potatoes, remaining chopped onion, and celery. Cook until the potatoes are tender, about 15 to 20 minutes. Remove from heat and let sit for 20 to 30 minutes before serving.

For a richer flavor, brown the ground beef separately before adding it to the pot.
Feel free to substitute ground beef with ground pork or ground lamb.
This stew can be cooked on the stovetop or in a slow cooker. If using a slow cooker, cook on low for 6-8 hours.
Serve as a stew, with crushed chips, crackers, or cornbread, or over rice.
