Step

In a large pot, combine the black beans, pinto beans, and kidney beans. Cover with several inches of cool water and let stand for at least 12 hours to allow the beans to properly hydrate.

Bring the beans and soaking water to a boil in the same pot. Cook until the beans are tender and heated through, approximately 30 minutes. Drain the beans and set aside.

In a large skillet over medium-high heat, cook and stir the andouille sausage, ground beef, onion, bell pepper, and garlic until the meat is browned and crumbly, about 5-10 minutes. Drain any excess fat.

Transfer the cooked beans, sausage mixture, corn, water, salsa, chili sauce, and white vinegar to a slow cooker. Stir well to combine all ingredients.

Cook on High setting for at least 4 hours, stirring occasionally to prevent sticking. Season with salt and ground black pepper to taste before serving.

For a richer flavor, consider using smoked sausage instead of andouille.
If you prefer a vegetarian option, omit the meats and add extra vegetables such as diced zucchini or carrots.
The cooking time may vary depending on your slow cooker. Check the beans for tenderness after 4 hours and adjust cooking time as needed.
