Follow The Directions

01

Step

Preheat oven to 400°F (200°C). Line an 11-inch round baking pan with parchment paper. (5 minutes)

02

Step

In a large bowl, gently combine sliced apples, 1/2 cup granulated sugar, melted butter, and brown sugar. Be careful not to break the apple slices. (5 minutes)

03

Step

Pour any accumulated sugary juice from the apple mixture into the prepared baking pan. Arrange sliced apples attractively on top in a circular pattern. Sprinkle raisins evenly over the apples, then drizzle any remaining juice over all. (10 minutes)

04

Step

In a separate large mixing bowl, whisk together olive oil and cinnamon. Add egg yolks, flour, grated apples, baking powder, and the remaining 2 cups of granulated sugar. Stir until well combined. (10 minutes)

05

Step

In a clean, dry bowl, beat egg whites until light and frothy. Gently fold the egg whites into the olive oil mixture, being careful not to deflate them. (5 minutes)

06

Step

Pour the batter evenly over the apples in the baking pan. (2 minutes)

07

Step

Bake in the preheated oven until a knife inserted into the center comes out clean, approximately 45 minutes. If the top begins to brown too quickly, cover the cake loosely with foil. (45 minutes)

08

Step

Remove the cake from the oven and let it cool in the pan for about 30 minutes before inverting onto a serving plate. (30 minutes)

For an extra layer of flavor, try adding a splash of brandy or apple cider vinegar to the apple mixture.
Nuts, such as chopped walnuts or pecans, can be added along with the raisins for added texture and flavor.
Serve warm with a dollop of Greek yogurt or a scoop of vanilla ice cream.
