Follow The Directions

01

Step

Sauté the Zucchini (10-16 minutes): In a skillet, heat olive oil over medium heat. Add zucchini slices in a single layer (work in batches if necessary) and cook until golden brown on both sides, flipping halfway through. Remove from skillet and set aside on a plate lined with paper towels to drain excess oil.

02

Step

Prepare the Oven & Pan (2 minutes): Preheat oven to 375°F (190°C). Lightly coat an 8-inch pizza pan with cooking spray.

03

Step

Make the Dough (20 minutes): In a mixing bowl, combine flour, yeast, sugar, and salt. Gradually add vegetable oil and warm water, mixing until a shaggy dough forms. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Roll the dough out to fit the prepared pizza pan. Create a slight rim by folding over the edges.

04

Step

Assemble the Pizza (5 minutes): Spread pizza sauce evenly over the dough. Sprinkle mozzarella cheese over the sauce, and arrange the sautéed zucchini slices artfully on top.

05

Step

Bake the Pizza (15 minutes): Bake in the preheated oven until the crust is golden brown and the cheese is melted and bubbly. Rotate the pizza halfway through for even cooking.

06

Step

Finish with Mascarpone (2 minutes): Remove pizza from the oven and immediately dollop chilled mascarpone cheese evenly over the hot pizza. The residual heat will gently melt the cheese.

07

Step

Rest & Serve (5-10 minutes): Let the pizza cool for a few minutes before slicing and serving. Enjoy the symphony of flavors!

For a richer flavor, brush the crust with garlic-infused olive oil before adding the sauce.
Fresh herbs like basil or oregano can be added after baking for an extra layer of flavor.
If you don't have mascarpone cheese, you can substitute it with ricotta cheese. Make sure to drain any excess water off the ricotta cheese.
For a spicier flavor, add a pinch of red pepper flakes to the pizza before baking.
