For an extra burst of lemon flavor, brush the cooled cake layers with a simple syrup made from lemon juice and sugar before assembling. If you don't have a double boiler, a heatproof bowl set over a simmering pot of water works just as well. Be sure the bottom of the bowl doesn't touch the water. Make the lemon curd a day in advance for an even easier assembly process. Garnish the finished cake with fresh berries or a dusting of powdered sugar for an elegant touch.
