Step

Preheat oven to 325 degrees F (165 degrees C). Grease and lightly flour a loaf pan. (5 minutes)

In a large bowl, whisk together 1 1/2 cups sugar, applesauce, oil, and eggs until well combined. Stir in the dried lemon peel and 1 teaspoon lemon extract. Gradually pour in the milk, stirring until just combined. (10 minutes)

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. (5 minutes)

Pour the batter into the prepared loaf pan and spread evenly. (2 minutes)

Bake in the preheated oven for approximately 70-75 minutes, or until a toothpick inserted into the center comes out clean. (75 minutes)

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. (10 minutes)

While the bread is cooling, prepare the glaze. In a small saucepan, whisk together 1/2 cup sugar, water, and 1/2 teaspoon lemon extract. Heat over medium heat, stirring constantly, until the sugar is melted and the glaze is slightly thickened, about 1-2 minutes. Add more water, 1/2 teaspoon at a time, until desired consistency is reached. (5 minutes)

Once the bread is slightly cooled, poke several small holes in the top with a toothpick or skewer. Brush the glaze evenly over the top of the loaf, allowing it to soak into the holes. (3 minutes)

For an extra burst of lemon flavor, add the zest of one lemon to the batter.
To prevent the top of the bread from browning too quickly, tent it with foil during the last 20 minutes of baking.
This bread is best stored in an airtight container at room temperature.
Feel free to experiment with other citrus flavors, such as orange or lime.
