Grill or broil the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear when pierced with a fork. (25-30 minutes)

Prepare the Keligun: Once the chicken is cooked, remove the bones and dice the chicken meat into bite-sized pieces. Place the diced chicken in a medium bowl. (10 minutes)

Combine and Serve: Add the lemon juice and salt to the diced chicken and mix well. Then, add the toasted coconut, chopped green onions, and lemon pepper seasoning. Mix everything together thoroughly. Garnish with additional chopped green onions and serve immediately. (5 minutes)

For a richer flavor, toast the flaked coconut in a dry skillet over medium heat until golden brown, stirring constantly to prevent burning.
Adjust the amount of lemon pepper seasoning and red pepper flakes to your preference.
Serve Keligun Chicken with a side of steamed rice or grilled vegetables for a complete and satisfying meal.
Consider adding a splash of coconut milk for extra richness.
