Turn on your Instant Pot® and select the Saute function. Pour in the olive oil and heat until shimmering. Add the cubed beef stew meat, season generously with salt and pepper. Brown the meat on all sides, ensuring a rich sear for optimal flavor. (5-7 minutes per side)

Transfer the browned beef to a separate plate, leaving the flavorful juices in the pot. Add the chopped jalapenos, minced garlic, and minced fresh ginger to the pot. Cook, stirring frequently, until the aromatics are fragrant and softened. (about 2 minutes)

Season the mixture in the pot with the curry powder, allowing it to bloom and release its aromatic oils. Pour in half of the beef broth, scraping up any browned bits from the bottom of the pot with a wooden spoon. This deglazing step adds depth and richness to the stew.

Return the browned beef to the Instant Pot. Add the remaining beef broth, fire-roasted diced tomatoes, Yukon Gold potatoes, sliced carrots, and sliced onion. Stir gently to combine all ingredients.

Close and lock the lid of the Instant Pot. Select high pressure according to the manufacturer's instructions and set the timer for 35 minutes. Allow the pot to come to pressure. (10-15 minutes)

Once the cooking time is complete, allow the pressure to release naturally for 10 minutes. Carefully release any remaining pressure using the quick-release method according to the manufacturer's instructions. (about 5 minutes)

Unlock and carefully remove the lid. Stir the stew gently and serve hot. Enjoy the symphony of flavors!

For a richer flavor, consider using bone broth instead of regular beef broth.
Adjust the amount of jalapenos to control the spice level. Remove the seeds for a milder heat.
If you prefer a thicker stew, you can whisk together a tablespoon of cornstarch with two tablespoons of cold water and stir it into the stew after cooking. Simmer for a few minutes until thickened.
Garnish with fresh cilantro or a dollop of plain yogurt for a cooling contrast to the spice.
