For extra crispy tater tots, consider double-frying them. Fry them once at a slightly lower temperature (325°F) for 2 minutes, then a second time at 350°F until golden brown. If you don't have peanut oil, vegetable oil or canola oil works well as substitutes. Avoid olive oil, as it has a lower smoke point. Feel free to experiment with different seasonings. Garlic powder, smoked paprika, or a pinch of cayenne pepper can add a unique twist. To prepare ahead, shape the tater tots and freeze them on a baking sheet. Once frozen, transfer them to a freezer bag. Fry directly from frozen, adding an extra minute or two to the cooking time.
