Grill the Potatoes: Place the seasoned potato slices directly onto the hot grill, seasoned-side down. Brush the unseasoned side with the remaining tablespoon of olive oil and sprinkle with the seasoning blend. Close the grill lid and cook for 15 to 20 minutes, flipping the slices halfway through. The potatoes are done when they are tender and slightly charred, with visible grill marks. (20 minutes)

For extra flavor, try adding a pinch of garlic powder or smoked paprika to the seasoning blend.
If you don't have an outdoor grill, you can use a grill pan on your stovetop or even bake the potato slices in a preheated oven at 400°F (200°C) for about 25-30 minutes, flipping halfway through.
Leftover grilled potato slices can be stored in the refrigerator for up to 3 days. Reheat them in a skillet or microwave.
