Stuff the Chicken: Season the insides of the flattened chicken breasts with salt, pepper, and garlic powder. Layer spinach, tomato, red onion, and feta cheese evenly over each breast. Gently roll the chicken over the stuffing to create a neat bundle and secure the ends with butcher's twine. (10 minutes)

Prepare the Lemon-Herb Sauce: In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, rosemary, thyme, salt, and pepper. Taste and adjust seasonings as needed. (5 minutes)

Sear and Bake: Heat a cast iron skillet over medium-high heat. Add the stuffed chicken breasts and sear until golden brown on all sides, about 5 minutes per side. Brush half of the lemon-herb sauce over the seared chicken. (15 minutes)

Bake to Perfection: Transfer the skillet to the preheated oven and bake for 30 minutes. Remove from oven and pour the remaining sauce over the chicken. Return to the oven and continue baking until an instant-read thermometer inserted into the center of the chicken reads at least 165 degrees F (74 degrees C), approximately 10 to 15 minutes more. (45 minutes)

If you don't have butcher's twine, you can secure the chicken with toothpicks.
