Follow The Directions

01

Step

In a large, heavy-bottomed saucepan, combine the sugar and water. (2 minutes)

02

Step

Bring the mixture to a rolling boil over high heat, stirring occasionally to dissolve the sugar completely. Boil for 2 to 3 minutes, until the syrup slightly thickens. (5 minutes)

03

Step

Remove the saucepan from the heat and carefully stir in the vinegar and minced ginger. (1 minute)

04

Step

Allow the mixture to cool completely to room temperature. This may take several hours. (120 minutes)

05

Step

Once cooled, strain the syrup through a fine-mesh sieve lined with cheesecloth to remove the ginger solids. Ensure you extract as much liquid as possible. (10 minutes)

06

Step

Transfer the strained ginger syrup to a sterile glass container with an airtight lid. Store at room temperature, away from direct sunlight. The syrup will keep for an extended period without refrigeration.

For a deeper ginger flavor, allow the ginger to steep in the syrup for a longer period (up to 24 hours) before straining.
Experiment with different types of vinegar, such as apple cider vinegar or balsamic vinegar, to customize the flavor profile.
Sekanjabin is traditionally served diluted with water. Adjust the ratio of syrup to water according to your preference, typically 1 part syrup to 4-5 parts water.
Serve chilled or over ice. Garnish with fresh mint or slices of cucumber and lemon for an extra touch of freshness.
Sekanjabin can also be drizzled over fresh fruit, such as melon, peaches, or berries, for a delightful dessert.
