Follow The Directions

01

Step
5 mins

Prepare the Garlic: Gently separate the garlic cloves and peel them. (5 minutes)

02

Step
2 mins

Infuse the Oil: In a small saucepan, combine the garlic cloves, olive oil, and thyme sprigs. Ensure the garlic is mostly submerged in the oil; add more if needed. (2 minutes)

03

Step
1 hrs

Slowly Simmer: Place the saucepan over medium-low heat. Once you see a gentle simmer (tiny bubbles forming around the garlic), reduce the heat to the lowest setting. Cook for 45-60 minutes, or until the garlic cloves are completely soft and yielding when pierced with a fork. The garlic should not brown; adjust the heat as needed to maintain a very gentle simmer. (45-60 minutes)

04

Step
30 mins

Cool and Store: Remove from heat and let the confit cool completely in the oil. This allows the flavors to meld further. (30 minutes)

05

Step

Transfer to a sterilized jar and store in the refrigerator for up to 2 weeks, or freeze for longer storage.

Use high-quality olive oil for the best flavor.
Be patient and keep the heat low. The goal is to gently poach the garlic, not fry it.
Feel free to add other herbs or spices to the oil, such as rosemary, bay leaf, or red pepper flakes, for a customized flavor.
The infused garlic oil is delicious! Drizzle it over roasted vegetables, salads, or pasta.

I was a little nervous about simmering the garlic for so long, but it turned out perfectly. The garlic is so sweet and mild.
