Cook for 2-3 minutes per side, or until golden brown and crispy. Transfer the fried green tomatoes to a plate lined with paper towels to drain excess oil. Wipe out the skillet with a paper towel and return it to medium heat. (Cook time: 8-10 minutes)

Assemble and Grill the Sandwich: Spread butter evenly on one side of each slice of sourdough bread. Place two slices of bread, butter-side down, into the skillet. On each bread slice, layer 3 slices of fried green tomato, 3 slices of red tomato, 1 slice of pepper jack cheese, and 1 tablespoon of chopped pickled jalapeños. Top with the remaining two bread slices, butter-side up. (Assembly time: 5 minutes)

Carefully flip the sandwiches and continue to cook until the other side is golden brown and the cheese is fully melted and gooey, another 3-4 minutes. For extra flavor, consider adding a sprinkle of garlic powder or smoked paprika to the cornmeal before coating the green tomatoes.
If you prefer a milder flavor, you can substitute Monterey Jack or cheddar cheese for the pepper jack.
