Step

In a medium saucepan, bring 2 cups of water to a boil over high heat. (2 minutes)

Add 1 cup of pearled farro to the boiling water. Reduce the heat to low, cover the saucepan, and simmer until the farro is tender and the water has been absorbed. (35-40 minutes)

While the farro is cooking, prepare the remaining ingredients: drain and rinse the great northern beans, halve the cherry tomatoes, and chop the parsley. (10 minutes)

Once the farro is cooked, fluff it with a fork and transfer it to a large bowl. Allow it to cool slightly. (5 minutes)

Add the drained great northern beans, halved cherry tomatoes, chopped parsley, and grated Parmesan cheese to the bowl with the farro. (2 minutes)

Drizzle with lemon juice (and olive oil, if using). Season with salt and freshly ground black pepper to taste. Gently fold all the ingredients together until well combined. (2 minutes)

Taste and adjust the seasoning as needed, adding more lemon juice, salt, or pepper to your preference. Serve immediately or chill for later. (3 minutes)

For a richer flavor, toast the farro in a dry pan over medium heat for 3-5 minutes before cooking.
If you don't have great northern beans, cannellini beans or chickpeas make excellent substitutes.
Feel free to add other vegetables such as cucumber, bell pepper, or red onion.
A sprinkle of red pepper flakes can add a touch of heat.
