Bring vegetable broth to a boil in a large pot. (5 minutes)

While the broth heats, warm vegetable oil in a skillet over medium heat. Add chopped onion and celery and cook, stirring occasionally, until softened, approximately 5-10 minutes. Stir in Chinese 5-spice powder, coating the vegetables, and cook until fragrant, about 1 minute. (11 minutes)

Add the sweet potatoes, apples, salt, and the onion-celery mixture to the boiling broth. Reduce heat and simmer until the sweet potatoes are tender, about 20-25 minutes. (25 minutes)

Allow the soup to cool slightly for at least 5 minutes before blending. (5 minutes)

Carefully transfer the soup to a blender, filling it no more than halfway. Secure the lid tightly and pulse a few times before blending continuously until smooth. Repeat in batches until all the soup is pureed.

For a richer flavor, roast the sweet potatoes and apples before adding them to the soup.
A touch of maple syrup can enhance the sweetness of the soup.
Garnish with a swirl of coconut milk or a sprinkle of toasted pumpkin seeds for added texture and flavor.
