Pour guajillo sauce into a large measuring cup and stir in sugar. Pour sauce over the beef mixture; stir in black beans. (2 minutes)

Place 3 tortillas on the bottom of a casserole dish. Add half the meat mixture on top. Sprinkle 1/2 of the shredded cheese on top. Repeat the layers, ending with cheese on top. (10 minutes)

Bake in the preheated oven until cheese is melted and golden brown. (25 minutes)

For a vegetarian version, substitute the ground beef with 1 (15-ounce) can of lentils or crumbled tofu.
Feel free to experiment with different vegetables, such as zucchini, corn, or mushrooms.
If you prefer a spicier dish, add a pinch of cayenne pepper to the beef mixture.
To prevent the tortillas from becoming soggy, lightly toast them before assembling the casserole.
