Follow The Directions

01

Step

In a large pot over medium-high heat, melt the butter. Add the chopped onion and cook, stirring occasionally, until translucent and softened, approximately 5-10 minutes.

02

Step

Incorporate the cubed butternut squash, apples, and 1 cup of water into the pot. Bring the mixture to a boil, then reduce the heat to low and simmer gently until the apples are tender, about 10-15 minutes.

03

Step

Carefully transfer the squash mixture to a blender, filling it no more than halfway. Secure the lid tightly and pulse a few times to begin, then blend until smooth. Repeat in batches until all the squash mixture is pureed. Transfer the puree to a bowl and season with salt and pepper to taste.

04

Step

In a separate saucepan, combine the red wine, cranberry juice, and 1/2 cup of water. Bring the mixture to a boil, then add the mulling spices. Reduce the heat to low and simmer for 2 minutes to infuse the flavors. Add the raisins and simmer until they are plumped and juicy, about 5-10 minutes. Drain the raisins, discarding the wine mixture.

05

Step

Gently fold the plumped raisins into the squash puree. Transfer to a serving dish and generously crumble the goat cheese over the top. Serve warm and enjoy!

For an extra layer of flavor, consider browning the butter before adding the onions. This imparts a nutty richness to the dish.
Feel free to experiment with different types of apples, such as Honeycrisp or Fuji, for a unique twist.
If you prefer a vegan option, substitute the butter with olive oil and the goat cheese with a plant-based alternative.
