Follow The Directions

01

Step
5 mins

Preheat oven to 375 degrees F (190 degrees C). Carefully cut off the top of the pumpkin, creating a lid. Scrape out all the seeds and stringy pith. (5 minutes)

02

Step
10 mins

In a large, deep skillet, melt shortening over medium heat. Sauté the chopped onions and diced celery until softened. (10 minutes)

03

Step
15 mins

Add the lean ground beef to the skillet and cook, breaking it apart with a spoon, until evenly browned. Drain off any excess grease. (10-15 minutes)

04

Step
20 mins

Stir in the ground black pepper, ketchup, crushed garlic, salt, Worcestershire sauce, and tomato sauce. Reduce heat and simmer for 15-20 minutes, allowing the flavors to meld together. (20 minutes)

05

Step
5 mins

In a large mixing bowl, combine 2 cups of the beef mixture with soy sauce, drained mushrooms, brown sugar, condensed cream of celery soup, and cooked white rice. Mix thoroughly. (5 minutes)

06

Step
1 hrs

Carefully pour the beef and rice mixture into the prepared pumpkin. Replace the pumpkin lid. If desired, wrap the bottom of the pumpkin with foil to prevent burning.

07

Step

Place the filled pumpkin on a baking sheet and bake in the preheated oven for 1 hour, or until the pumpkin flesh is tender when pierced with a fork. (60 minutes)

08

Step

To serve, carefully scoop out portions of the filling along with some of the cooked pumpkin flesh for a truly unique and flavorful experience.

For a richer flavor, consider using beef broth instead of water when simmering the beef mixture.
You can easily adapt this recipe to be vegetarian by substituting the ground beef with lentils or crumbled plant-based protein.
Feel free to add other vegetables like bell peppers, carrots, or zucchini to the beef mixture for added nutrients and flavor.
The remaining beef mixture can be frozen for a quick and easy meal another time.
