Hollow and Collect: Carefully scoop out the tomato pulp with a spoon, leaving a shell approximately 1/2 to 1/4 inch thick. Place the scooped-out pulp into a large bowl. (10 minutes)

Create the Filling: Add the distilled white vinegar and extra virgin olive oil to the bowl with the tomato pulp. Stir well, breaking up any large chunks of pulp, until the mixture is evenly combined. (5 minutes)

Season to Perfection: Season the tomato pulp mixture generously with salt and freshly ground black pepper to your liking. Adjust the seasoning as needed. (2 minutes)

Fill the Tomatoes: Evenly spoon the seasoned tomato pulp filling back into the hollowed-out tomato shells, mounding it slightly. (5 minutes)

Chill and Serve: Refrigerate the filled tomatoes for at least 10 minutes to allow the flavors to meld and the tomatoes to chill. Serve cold and enjoy! (10 minutes)

For an extra layer of flavor, consider adding a pinch of dried oregano or basil to the tomato pulp mixture.
If you prefer a sweeter flavor, you can add a teaspoon of sugar or honey to the filling.
Garnish with fresh basil leaves or a sprinkle of paprika before serving for a more visually appealing presentation.
