Seal the bag and shake vigorously until each piece is evenly coated with cornstarch. If needed, sprinkle additional cornstarch by hand to ensure a complete coating on each piece. (Prep time: 10 minutes)

Heat the canola oil in a wok or large nonstick skillet over medium-high heat until shimmering. Carefully add the tofu pieces one by one to avoid overcrowding. Cook until each piece is gloriously golden brown, using a slotted spoon to turn them frequently, ensuring even browning on all sides. This should take approximately 10 to 15 minutes. Transfer the crispy tofu to a plate lined with paper towels to drain excess oil. Pour out any remaining oil from the wok. (Cook time: 15 minutes)

Add the white parts of the sliced green onions to the wok and sauté until fragrant, about 1 minute. Pour in the prepared General Tso's sauce. Allow the sauce to heat through and thicken slightly, about 2 minutes. Return the crispy tofu to the wok and toss gently to coat each piece evenly in the flavorful sauce. Discard the crushed ginger. (Cook time: 3 minutes)

For an extra layer of flavor, try marinating the tofu in a mixture of soy sauce, ginger, and garlic for 30 minutes before coating it in cornstarch.
