Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Lightly spray the inside bottom of a 9x13 inch jelly roll pan with cooking spray. (5 minutes)

02

Step

In a large bowl, combine the sugar cookie mix, softened butter, and egg. Mix until a soft, pliable dough forms. Press the dough evenly into the prepared pan, ensuring it covers the entire surface. (10 minutes)

03

Step

Bake in the preheated oven until the crust is lightly golden brown, approximately 10 to 15 minutes. Remove from oven and let cool completely on a wire rack. (30 minutes)

04

Step

While the crust cools, prepare the cream cheese filling. In a bowl, using an electric mixer on medium speed, beat the softened cream cheese until smooth and creamy. Gently fold in the thawed whipped topping until well combined. Spread the cream cheese mixture evenly over the cooled cookie crust. Refrigerate to allow the filling to set slightly. (15 minutes)

05

Step

Prepare the strawberry topping. In a 2-quart saucepan, whisk together the sugar and cornstarch. Add 1 cup of the sliced strawberries, water, and vanilla extract. Cook over medium heat, stirring frequently and gently mashing the strawberries with the back of a spoon, until the mixture thickens and the strawberries soften, about 10 to 15 minutes. (20 minutes)

06

Step

If desired, stir in a dash of red food coloring to enhance the vibrancy of the strawberry topping. Remove from heat and let cool for 10 minutes. Gently stir in the remaining 3 cups of sliced fresh strawberries. (15 minutes)

07

Step

Spoon the strawberry mixture evenly over the cream cheese filling. Refrigerate for at least 1 hour, or until the topping is set and the squares are chilled. Cut into squares and serve within 4 hours for the best taste and texture. (60 minutes)

For a richer flavor, use salted butter for the crust. The salt enhances the sweetness of the sugar cookie mix.
Ensure the cream cheese is fully softened for a smooth, lump-free filling.
Adjust the amount of red food coloring according to your preference. A little goes a long way!
If you don't have fresh strawberries, you can use frozen strawberries, thawed and drained, but the fresh ones provide a better texture and flavor.
To prevent the cookie crust from sticking, you can line the baking pan with parchment paper before pressing in the dough.
For a neater presentation, chill the squares for a longer period before cutting.

The crust was a little crumbly, but the flavor was fantastic. I might add a bit more butter next time.
