Add the pressed garlic, stir well, cover again, and continue cooking until the mushrooms have released more juice and the garlic is lightly browned (approx. 3-5 minutes). Transfer the mushroom-garlic mixture, along with any accumulated juices, to a small bowl and set aside.

Create the Roux: Wipe the skillet clean with a paper towel to remove any burnt garlic residue. Melt the butter in the skillet over medium-low heat until it starts to bubble and foam. Sprinkle in the flour and whisk continuously to form a roux. Continue whisking until the roux has darkened slightly, achieving a light golden-brown color (approx. 2-3 minutes).

Develop the Sauce: Gradually add the milk to the roux, a few tablespoons at a time, whisking vigorously after each addition to ensure a smooth and lump-free sauce. Continue until all the milk is incorporated.

Combine and Simmer: Add the reserved mushroom-garlic mixture (with juices) back into the skillet. Bring the sauce to a very slow simmer and cook, stirring occasionally, until the sauce reaches your desired thickness (approx. 5-10 minutes).

Season and Serve: Season the sauce with salt and pepper to taste. Serve immediately over your favorite dishes.

For a richer flavor, consider using a combination of mushroom varieties, such as cremini and shiitake.
If you prefer a thicker sauce, whisk together 1 teaspoon of cornstarch with 1 tablespoon of cold milk and stir into the sauce during the last few minutes of simmering.
A splash of dry sherry or white wine added to the sauce while simmering can enhance the flavor profile.
Fresh thyme or parsley, chopped and stirred in at the end, adds a bright, herbaceous note.
