Char the Hatch chiles: Place the Hatch chiles directly on the grates of a gas stove over medium heat. Cook, flipping with tongs occasionally, until blackened and charred (approximately 5 minutes). Transfer to a sealed plastic bag and allow to cool (7-8 minutes). Peel off the charred skins, remove the seeds, and slice the chiles.

Prepare the potatoes: Slice the peeled russet potato into thin, even rounds using a mandoline or a sharp knife.

Fry the potatoes: Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Add the potato slices and fry undisturbed until they begin to brown and soften (8-12 minutes).

Add aromatics and finish: Add the sliced onion and the prepared Hatch chiles to the skillet. Season with seasoned salt and freshly cracked black pepper. Stir to combine. Continue cooking until the onions are translucent and the potatoes are fully softened and browned on the second side (5-8 minutes).

For a deeper smoky flavor, consider using smoked paprika in addition to or instead of seasoned salt.
If you don't have a mandoline, ensure your potato slices are as uniform as possible for even cooking.
Serve these potatoes as a side dish for breakfast, brunch, or even alongside grilled meats for dinner. Garnish with fresh cilantro for a pop of color and flavor.
