While the pasta cooks, heat a large, high-sided skillet or Dutch oven over medium heat. Add the sliced Italian sausage and sliced onion and cook, breaking up the sausage with a spoon, until the sausage is lightly browned and the onion is softened. Drain off any excess grease. (8-10 minutes)

Add the sliced red, green, and yellow bell peppers to the skillet. Cook, stirring frequently, until the peppers are slightly tender, about 2 minutes.

Pour in the tomato sauce and stir in the dried oregano. Bring the sauce to a simmer, then reduce the heat to low, cover, and let it simmer gently for 5 minutes, allowing the flavors to meld.

For a spicier dish, use hot Italian sausage or add a pinch of red pepper flakes to the sauce.
Feel free to add other vegetables, such as mushrooms or zucchini, to the skillet along with the bell peppers.

A splash of heavy cream at the end adds richness and depth.
