Gently stir in the thinly sliced white fish and continue to simmer until the fish is just cooked through and opaque. Be careful not to overcook the fish. (10 minutes)

Ladle the steaming congee into individual bowls. Garnish generously with pickled Chinese vegetables, julienned roast pork, chopped scallions, and crushed peanuts. Drizzle with a touch of vinegar and soy sauce to taste, enhancing the savory notes of the dish.

For an even smoother congee, consider using a blender or immersion blender to partially blend the rice after simmering. This will create a supremely velvety texture.
Feel free to customize the toppings with your favorite ingredients. Crispy fried shallots, chili oil, or a soft-boiled egg would also be excellent additions.
The type of rice used will affect the final texture. Short-grain rice will yield a stickier congee, while long-grain rice will be slightly looser.
