In a large bowl, combine the shredded cabbage, diced red and yellow bell peppers, chopped red onion, grated carrots, and chopped celery. Mix well to distribute the vegetables evenly. (Prep time: 15 minutes)

Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and the vegetables to crisp up. (Refrigeration time: 30+ minutes)

In a separate small bowl, whisk together the apple cider vinegar, vegetable oil, white sugar, dry mustard powder, and dried dill weed until the sugar is completely dissolved and the dressing is emulsified. (Prep time: 5 minutes)

Just before serving, pour the vinaigrette over the vegetable mixture and toss gently but thoroughly to ensure that all the vegetables are evenly coated with the dressing. (Prep time: 2 minutes)

Serve immediately or refrigerate for a short period to allow the flavors to develop further. Note that the coleslaw will become softer as it sits in the dressing. (Optional refrigeration time: up to 30 minutes)

For a sweeter coleslaw, increase the amount of sugar to taste.
If you prefer a creamier coleslaw, you can add a small amount of mayonnaise or Greek yogurt to the dressing, but be sure to adjust the other ingredients accordingly.
Feel free to experiment with other vegetables, such as shredded Brussels sprouts, kohlrabi, or jicama.
For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce to the dressing.
