For extra crispy chicken, double-fry it! Fry once at 325°F (160°C) for 5 minutes, then increase the heat to 375°F (190°C) and fry again for 2-3 minutes until golden brown. Adjust the number of chilies to your preferred spice level. For a milder dish, remove the seeds from the chilies before using them. If you can't find banana ketchup, regular ketchup works fine, but the banana ketchup adds a unique, slightly tangy sweetness that's worth seeking out. Make sure your oil is at the correct temperature for frying. If it's not hot enough, the chicken will absorb too much oil and become greasy.
