In a large bowl, using an electric mixer, cream together the 6 tablespoons of softened butter and 1/4 cup of granulated sugar until light and fluffy. (3 minutes) Add the egg and beat until smooth, then beat in the corn syrup. (2 minutes)

In a separate small bowl, whisk together the flour and cocoa powder. (1 minute) Gradually beat half of the flour mixture into the butter mixture until just combined, then beat in the remaining flour until a dough forms. (4 minutes)

Lightly flour a clean work surface. Divide the dough in half. Roll each half into a thin rectangle (about 1/8 inch thick). (7 minutes) Use a knife or pastry cutter to cut each rectangle into smaller rectangles, approximately 1x3 inches. (5 minutes)

Place the cookies onto the prepared baking sheets, spacing them about 2 inches apart. (3 minutes) Bake until firm, 10-15 minutes. Let cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely. (20 minutes)

While the cookies are baking, prepare the filling. In a small, heatproof saucepan set over the lowest heat, melt the chocolate chips, stirring constantly until almost completely melted. (5 minutes) Remove from heat and continue stirring until smooth. Let cool to room temperature. (15 minutes)

In a large bowl, beat together 1 cup of confectioners' sugar and 1/2 cup of softened butter until smooth and creamy. (4 minutes) Gradually beat in the cooled melted chocolate until well combined. (3 minutes)

Once the cookies are completely cool, spread about 1/2 teaspoon of filling onto the bottom of half of the cookies. Top with the remaining cookies to create sandwiches. (10 minutes) Lightly dust the filled cookies with additional confectioners' sugar before serving. (2 minutes)

For a richer chocolate flavor, use dark chocolate chips in both the cookies and the filling.
Store filled cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
