In a large pot, heat olive oil over high heat. Add ground beef and cook, breaking it apart with a spoon, until browned (about 2 minutes). Add diced onion and salt, continuing to cook until the beef is crumbly and the onions are translucent (about 5 minutes).

While the chili simmers, fill a large pot with lightly salted water and bring to a rolling boil. Add elbow macaroni and cook, uncovered, stirring occasionally, until the pasta is al dente (about 8-10 minutes, or 1 minute less than the package directions).

Turn off the heat under the chili. Drain the cooked macaroni thoroughly and add it to the pot of chili. Stir until the macaroni is well coated in the chili.

Transfer the chili-mac mixture into a large, deep (15x10-inch) baking dish. In a separate bowl, combine the shredded Cheddar and Monterey Jack cheeses. Sprinkle about 60% of the cheese mixture evenly over the top of the chili mac. Use a spoon to gently mix the cheese into the casserole.

Sprinkle the remaining cheese evenly over the top of the casserole, lightly pressing it into the surface with the tip of a spoon.

For a spicier kick, add a pinch of red pepper flakes or a dash of your favorite hot sauce to the chili.
Feel free to experiment with different cheeses! Pepper jack, Colby jack, or even a smoked Gouda would be delicious additions.
If you don't have crushed tomatoes, you can use tomato sauce or puree. Just be sure to adjust the amount of water accordingly to achieve the desired consistency.
For a vegetarian version, substitute the ground beef with plant-based crumbles.
